A student at an agricultural university has created diet marmalade

The Kuban Timashevsky confectionery plant (Krasnodar Territory) began to produce dietary, low-calorie marmalade that does not contain sugar and dyes.

The technology for the production of new marmalade was developed by a fifth-year student of the Kuban State Agrarian University (KubSAU) Elvira Kurtnezirova. Professor Natalya Sokol, representing the University’s Department of Plant Storage and Processing Technology, said that the sugar in the recipe is completely replaced by isomalt, a natural low-calorie sugar substitute that is obtained from sugar beet processing. People with diabetes, obesity and other diseases can safely consume such sweets, since isomalt does not increase blood sugar. It is also harmless to tooth enamel and bones.

Moreover, Elvira Kurtnezirova did not include dyes in the recipe for her marmalade, which makes it an even more valuable product. Instead of synthetic dyes, natural ones are used to color marmalade in different colors. These are extracts of biologically pure herbs and fruits: nettle, peppermint, rose hip and hawthorn.

A trial batch of diet marmalade made according to the technology developed by a student at KubSAU has already been released by the confectioners of the Timashevsky confectionery plant. The novelty should appear in the near future on the shelves of shops of the Krasnodar Territory under the names "Berry" and "Fito".
