Jam pie - general principles and methods of preparation

Such a sweet treat as jam is loved by both adults and children. Therefore, pies with jam are very popular. Mistresses love them for their ease of preparation, the ability to cook from products that are always available in any kitchen, for consistently good results and great taste. And also - for the opportunity to find worthy use of jam, which was so carefully prepared, but for some reason stagnated on a shelf in the pantry.

Any jam can be used as a filling for the pie, however, most often they use a sweet product made from cherries, currants, apples, plums, strawberries, strawberries, blueberries, lingonberries, cranberries.

Recipe 1: Loose Cake with Plum Jam

This recipe for crumbly shortcrust pastry can be called classic. Plum jam gives it a very interesting sweet sourness, so even those who are not a big fan of sweets will like it.

Ingredients:

700 gr flour;
3 eggs;
250 gr margarine;
2/3 cup sugar;
vinegar slaked soda;
a pinch of salt;

For filling:

0.5 l thick plum jam.

Cooking method:

1. Separating the yolks from the proteins, beat them with a mixer, adding sugar in portions until they turn white. Then melt the margarine and mix it with whipped yolks, salt and soda, quenched with vinegar, once again mix the resulting mass well.

2. Add the flour to the resulting mixture in portions, knead the dough well, separate the fourth part from it and place in the freezer.

3. Halve the remaining dough. Having greased the form with vegetable oil, sprinkle it with flour and put one half of the dough there. By leveling it with our hands, we make small sides.

4. The second half of the dough is not thinly rolled out with a rolling pin.

5. We put half the filling on the dough in the form and cover it with a rolled dough layer, again making small sides. Put the second part of the jam on top.

6. We take out the dough from the freezer and use a coarse grater to rub it directly on the jam, thus obtaining the last layer of the pie.

7. Bake the cake for 40 minutes at 180 degrees.

Recipe 2: Yeast Pie with Jam

Another classic of the genre is a pie with yeast dough. It turns out not only tasty, but also very beautiful, so it can be the pride of any housewife and become her signature dish.

Ingredients:

50 gr fresh yeast;
500 gr. milk;
7 glasses of flour;
5 eggs;
1 pack of cream margarine;
200 gr. Sahara;
salt;

For filling:

0.5 l of any thick jam

Cooking method:

1. Melt margarine in a water bath. Dissolve the yeast in half a glass of warm whey or milk.

2. Beating eggs in a mixer with sugar in a thick white foam, add margarine and whey with yeast to them.

3. Pour the sifted flour into the mixture, knead the dough with the density of sour cream and, putting it in the heat, let it come.

4. When our dough comes up, we crush it and divide it into 3 parts, of which two more should be equal in size, and the third should be smaller. One piece of dough of the larger ones is rolled out thinly and greased with jam. The second is also rolled out, but already thinner, we cover it with a layer of jam and pinch the edges.

5. From a smaller piece of dough we make decorations in any shape (Christmas trees, flowers, etc.) and decorate the top of the cake with them. Leave for half an hour to proof.

6. Grease the cake with yolk and bake at 180 degrees until it is browned.

Recipe 3: Whipped Jam Pie

This version of the jam pie differs from other recipes in that this sweet product does not participate in it as a filling, but as a component of the dough. Its advantage is the ability to whip up, for example, when guests unexpectedly came to you.

Ingredients:

1 egg
300 gr flour;
half a glass of sugar;
half a glass of coffee or tea;
200 gr. jam;
1 tbsp. l vegetable oil;
soda (1 tsp).

Cooking method:

1. After breaking an egg in a bowl, add soda, sugar, and jam there (the most delicious pie with blackcurrant or blueberry jam is obtained), mix everything thoroughly.

2. There we add vegetable oil and liquid in the form of tea or coffee (coffee drink). An important point: the prepared drink should first be cooled so that the eggs do not curl.

3. After adding flour to the mixture, mix everything thoroughly (you can use a mixer to get the best result).

4. Having greased the baking dish with butter, cover it with parchment and pour out the dough, bake the cake in the oven at 180 degrees.

Jam pie - tips from experienced chefs

Jam pies are especially tasty if spices are added to them. For example, apple pie is very good with cinnamon.

To make sure that the closed jam cake is ready, you need to pierce it with a match. If the dough does not stick to it, you can turn off the oven and remove the cake.

Jam pies should be filled with filling and finally made directly on a baking sheet, oiled. The pan must always be cold.

Ready closed pies with yeast dough jam should be allowed to rise a little on the sheet for about 20 minutes, and then, smearing them with yolk, put back in the oven for 3-5 minutes, then they will get a beautiful shine.

I prepared a cake according to the recipe No. 3 with blackcurrant jam. He looks frankly unaesthetic. A terrible dark green color did not save even icing sugar. I think this also applies to blueberry jam. I do not recommend cooking such a one for guests. And so, really, quickly and tasty. I liked homework.
