Chickpea Soup - General Cooking Principles

Like any first course, chickpea soup can be prepared in meat, mushroom, fish or vegetable broth. In the East, where this bean product is especially popular, pork is not used for religious reasons. In the west, use any meat.

Chickpeas. Before cooking, peas need to be soaked for several hours in cool water. Better to do it at night. And in order not to provoke the multiplication of microbes and an unpleasant smell, the dishes can be put in the refrigerator. The chickpea will increase in size, it will need to be washed and boiled until tender. After boiling, boil for 5-8 minutes, drain the water and you can cook the soup. Boil peas in broth for 40-60 minutes.

Vegetables. In the soup with chickpeas, they are added in the same way as when cooking classic main dishes with legumes, that is, when the peas are almost ready. Vegetables are cut into arbitrary pieces, soup with chickpeas can be cooked with or without frying.

Spices and herbs. In the east they are used in large quantities. Of the spices especially often add different types of pepper, turmeric, saffron. Greens are added to the plate fresh. If added to a pot of soup with chickpeas, then you must definitely bring the dish to a boil.

Recipe 1: Soup with chickpeas and oriental lamb

Unusually flavored soup with chickpeas and lots of spices. It is better to cook from lamb shanks, having previously removed the films. But you can use any other parts of the carcass, it turns out deliciously with ribs.

Required ingredients

• lamb 0.8 kg;

• chickpeas 0.2 kg;

• 1 carrot;

• 1 onion;

• 4 cloves of garlic;

• hot pepper pod;

• 3 tomatoes;

• sprig of thyme;

• butter;

• 1 tsp ground saffron;

• salt, hop-suneli to taste.

Cooking

Boil Turkish peas pre-soaked for 5-10 minutes, then you need to drain the water and set the peas aside. Throw the lamb into the cauldron, add a little oil and put on the stove to fry. After a few minutes, add peeled and chopped onion, crushed garlic. Fry everything together over medium heat. Peel the garlic, chop it and send it to the cauldron. At the pod of hot pepper, remove the tail with the seeds, chop finely and also send to the cauldron, add the thyme and continue to simmer over low heat.

Cut the carrots, tomatoes. Mix with prepared chickpeas, add saffron, black pepper, sunnel hops and send everything to the cauldron for lamb. Pour boiling water, approximately 2.5 liters, navigate the desired density of soup. Boil the chickpea soup for 40 minutes. Salt, cook for another 10 minutes, then pour the chopped herbs, bring to a boil, cover and let it brew for half an hour.

Recipe 2: Soup with Chickpeas and Meatballs

A simple recipe for a delicious soup with chickpeas, which is quite easy to prepare. Peas are soaked in advance, after which it will take no more than an hour to cook. Minced meat can be used any: chicken, pork, beef, turkey or a mixture.

Ingredients

• 300 gr. minced meat;

• 2 tablespoons of semolina;

• chickpeas 0.2 kg;

• 2 potatoes;

• 1 onion;

• 1 clove garlic;

• greenery;

• salt pepper;

• oil for frying meatballs.

Cooking

Pour swollen and washed chickpeas with fresh water, and leave to cook on the stove. To make the broth better, after 10 minutes it can be drained and pour peas with new boiling water. Boil chickpeas for 35-40 minutes. Then add peeled and chopped potatoes, salt and continue cooking.

Stuffing mix with semolina, salt, pepper, add chopped garlic. Mix everything, form meatballs, fry in vegetable oil in a pan until golden brown. Take out. In the same oil, fry finely chopped onions and grated carrots. When the potatoes are ready, put the sautéed vegetables in a pan, boil for 3-4 minutes, add herbs, bring to a boil and turn off.

Recipe 3: Soup with Chickpeas and Smoked Meat

Smoked pea soup is quite popular. A fragrant first course enjoys universal love. But what if you make soup with chickpeas and smoked meats? It will turn out not less interesting and tasty first dish.

Required ingredients

• 200 gr. turkish peas;

• 0.5 kg of smoked ribs;

• 3 potatoes;

• onion;

• 2 tablespoons of tomato paste;

• oil for roasting;

• salt;

• carrot.

Cooking method

In Spain, Cosido soup often serves as a first and second course. For density, you can add potatoes to it, and for piquancy, pickled olives. Greens are optionally placed in plates when serving.

Recipe 5: Chickpea Soup

• Salt chickpea soup at the end of cooking, otherwise the peas will remain hard.
